In the continuing series by the Strawbridge family – and in the absence of the Escape to the Chateau DIY series continuation – Dick and Angel have been making home movies of their life during lockdown.

In this episode the Strawbridge family picks elderflowers from the garden and gives you a quick and easy recipe to make delicious Elderflower Champagne.  Who knew it could be that simple?!  Take a look . . .

Miss Strawbridge is looking very chefly indeed!

Ingredients:

  • 2 pints compressed flowers
  • 3 lbs white sugar
  • 2 gallons of water
  • 4 tbsp white wine vinegar
  • Juice and zest of 4 lemons

Stir ingredients together and cover with a tea towel for 24-48 hours to ferment.  Strain your mixture and transfer to gassy bottles for two weeks to let it fizz up.

Three weeks later the Strawbridge family enjoyed a glass of bubble in the garden.  Sante!
