Today Karen the chatelaine of Château de Vaudezert brings us a delicious light and easy to prepare lunch recipe which will be perfect for the upcoming week when temperatures are set to soar.
To quote Karen “This is ideal as a buffet starter or as a fish course which is what we did last night. Easily adapted to whatever portion(s) you require.”
- Caesar dressing
- Lemon juice
- Crispy onions
Using a cake tin as a mould, slice the avocado and cover the bottom of the mould then add a layer of tuna with a drizzle of the Caesar dressing followed by avocado then tuna and avocado. Squeeze lemon juice over the avocado to prevent browning. Top with crispy onions et voila!
You can also change the filling by replacing tuna with crab or prawns. Bon appétit from la Belle Normandie!
Now that travel is open to France, Normandy is readily accessible and the Château de Vaudezert can be reached by ferry into Caen or Cherbourg. The family gathered recently at the Chateau to re open after the lockdown with Karen’s husband and daughter busily cleaning the pool and preparing the sunny terrace for upcoming celebrations and weddings.
